Who else is sad that this is the last week for peach season?! I snagged my last few peaches of the year from the Peach Truck at the farmers market (see them in my last post, https://airellecarr.com/farmers-market-run/ ) and decided to make a peach cobbler, my absolute favorite dessert. There are many different recipes out there for peach cobbler but I like to stick with my Mema’s “One Cup” peach cobbler. With crisp edges, and a delectable gooey center, it’s sure to win your family over! Try it out for yourself! You won’t be disappointed! If you don’t live in the south and already know it then be sure to share it with your friends and family!
“One Cup” Peach Cobbler
1. Peel six peaches and slice. Then add sliced peaches to 1/4 cup of water and 3/4 cup of sugar. Bring to boil then reduce heat to simmer.
2. Preheat oven to 350 degrees and grab your baking dish, any medium sized baking dish will work.
3. Place one stick of butter into baking dish and insert into the oven while it is preheating.
4. While butter is melting in the oven, mix one cup of sugar, one cup of flour, and one cup of milk into mixing bowl.
5. When butter is completely melted, carefully remove hot baking dish and pour your liquid mixture into the baking dish with the melted butter.
6. Spoon out peaches into baking dish on top of the melted butter and liquid mixture. Add a few table spoons of the peach juice that formed from simmering peaches.
7. Bake in the oven at 350 degrees for 45 min or until desired browning on top forms.
Tip: For a little extra something, brush a 1/2 stick of melted butter on top of crust 30 min into baking and sprinkle 1 tablespoon of sugar on top.
How easy was that?! Now enjoy with a side of homemade vanilla ice cream!
***PS… please excuse the poor quality of photos! It was super late when I made this cobbler and the family wanted to dig in asap! xoxo
